Happy Monday my friends! Yesterday I mentioned that there was one area that I am really struggling with on my journey to health. (My goal is remission from Lupus.) It has been quite challenging to find appetizing meals suitable for the AIP diet (Auto Immune Protocol Diet). Right now I am not eating any type of grains, nuts, legumes or dairy. Eggs are also currently not on the approved list. That may change in the future when I begin reintroducing foods. Some of the recipes that I have found and prepared have gone directly into the garbage after just one bite. This is SO FRUSTRATING given the time it takes to make the meals from scratch. Not to mention the ever rising costs of groceries. In this new series, Monday Meals, posts will feature good for you food that also tastes good. Up first is the Harvest Hash AIP Paleo Whole 30.
Harvest Hash AIP Paleo Whole 30
As a former bagel/toast and coffee gal I have had a tough time in what to eat for breakfast. I started out just eating fruit. The problem with that was I was full for about an hour and then completely starving! I needed protein and carbohydrates that would see me through until lunchtime. Confession: This is so good that I’ve also eaten it for lunch and dinner too. There is a recipe card located at the bottom of the post.
Ingredients
- One pound of sausage – I used organic pork
- One tablespoon of olive oil
- One yellow onion, diced
- One apple, cored and chopped – I used an organic Honeycrisp variety
- One cup of chopped greens such as spinach, chard or kale.
- One 10 ounce bag of chopped sweet potatoes – I used Stahlbush brand tri-colored sweet potatoes
- Sea salt to taste
Optional Ingredient Ideas
You can add in other herbs such as sage, thyme, cinnamon and nutmeg.
You can absolutely use a whole sweet potato instead of the prepared bag. Just peel and dice.
One butternut squash, one cup of carrots slices or a very small pumpkin can also be used in place of the packaged sweet potatoes. Just peel and dice.
For a vegan/vegetarian option simply remove the pork.
Instructions
- In a skillet, on medium heat, add in the olive oil then the onion and pork. Sauté until the meat has lost it’s pink color.
- Add in the sweet potato, apple and greens. Continue cooking, stirring occasionally, until the fruit and vegetables are tender.
- Season to taste.
Bon Appétit
For breakfast the hash pairs well with a small bowl of berries and a nice cup of tea.
Try serving it with a small salad at lunch or dinner time.
We eat with our eyes.
One tip that I can offer that has helped me tremendously is to set a pretty table.
Presentation often makes food look better and more inviting.
This trick has especially beneficial for my family members who often aren’t too excited to try what I am eating.
Leftovers are stored in glass jars and kept in the refrigerator. (Wish I had more of these vintage cuties!)
The hash keeps for up to 5 days.
The hash reheats beautifully in the microwave. This is such a bonus when it’s a busy morning and you need to get quickly out the door.

This sounds delicious, Laura. These days I usually eat an egg and some vegetables for breakfast. They keep me going until lunch.

I’m sure it is frustrating to find menus the whole family will eat. Or maybe you have to cook 2 meals, God forbid. I have a picky eater husband and it is hard for me to find things we both like. This recipe looks delicious and I am going to try it this week! Thanks for sharing!
