This delicious dish is perfect for when you need a healthy meal quickly. It is fabulous for using up older vegetables and leftovers. I hope you enjoy this Fast and Easy Holiday Hash Recipe. The recipe card is at the bottom of the post.

Ingredients
- One pound of pork sausage. (Turkey or chicken sausage can be used as a substitute.)
- One pound of assorted vegetables such as butternut squash, sweet potatoes, potatoes, celery, carrots, and/or onion. (Pre-chopped is great!)
- Herbs such as parsley, sage, rosemary and thyme.
- This time I also added two apples almost past their prime (peeled and chopped).

Sauté everything in a pan over low heat until the meat is fully cooked and the vegetables are tender.

The hash is absolutely delicious served on its own.

Top it with a yummy egg to add in even more protein.

My favorite is spooned over grits. It is SO delicious!

Last night I was in a rush for dinner and added in some squash from a previous nights dinner, mixed in a can of cream of chicken soup and then topped it with some leftover mashed potatoes to create a filling Shepherds Pie.

My veteran loved it!

Fast and Easy Holiday Hash Recipe
A delicious dish that goes together in minutes. Perfect for breakfast, lunch or dinner.
Ingredients
- One pound of ground pork sausage (Chicken or turkey sausage can be substituted)
- One pound of assorted vegetables such as butternut squash, sweet potatoes, onion, celery, red or yellow pepper
- Parsley
- Sage
- Rosemary
Instructions
- Chop up your vegetables or buy them pre-chopped to save even more time. (I used Trader Joe's.)
- Add vegetable and pork to a pot and sautee on low until the meat is cooked and vegetables are softened.
Notes
The beauty of hash is you can use any vegetableor seasoning that you love.
Serve it alone, over grits or with an egg for breakfast.
For lunch and dinner try it over rice or potatoes along with a salad.
great recipe Laura….going into my file. Thanks to your Veteran. Our whole family are/were Veterans. My late husband and our twins were Navy, as well as Father-in-law, brothers-in-law. My Father served in World War 11 in the Army in Germany and my Uncle served in the Army in the Philippines. Needless to say we are a very Patriotic family.
