A Road To Wellness
Last summer I followed the AIP (Auto Immune Protocol) diet for three months. Consuming no dairy, grains, sugar, eggs, nuts, and legumes was tough. All processed food was pretty much off the table. Everything I ate was made from scratch. After three months I began reintroducing some foods one at a time. I don’t seem to have a problem with consuming rice, oats, nuts, and eggs in moderation. I feel really awful if I eat gluten or dairy.
As someone who used to live to eat bread, cakes, donuts, etc. this has been a rough road.
Also, there are just some days that I don’t want to spend 2 hours in the kitchen fixing the days meals or washing all the dishes that go along with the preparation.
Puff Pastry
I’ve been following various AIP groups and websites that share recipes. An individual had made egg rolls with the Schar puff pastry. This captured my attention because I used to make salmon en croûte (crusted salmon) which uses puff pastry. So I wanted to try it. Fair warning: it’s a bit on the pricey side. But as I still try to stay away from processed food it is not something I will purchase all the time. Consider it a special occasion puff pastry.
Because someone will probably ask, my favorite salmon en croûte recipe is by the legendary Julia Child.
A Gluten Free Hot Pocket
However, before I could make salmon en croûte I found myself in need of Sunday lunch with a fairly empty refridgerator. I had some leftover cooked asparagus, baked ham, as well as some sauteed onion and red pepper.
I thought about the hot pockets I used to enjoy when I ate anything I wanted. Lightbulb moment! Out came the pastry. I should mention that this is not a sponsored post in any way, shape, or form. It’s just me trying to live a gluten free life.
I’ve attached the recipe card below. But it went together so fast!
I paired my “hot pocket” with some fresh fruit and a strawberry lemonade. Yum and yummier!
Full disclosure I ate this for breakfast the next day and it was still so good.
Recipe Card
Gluten Free Hot Pocket
A fast and easy recipe that is perfect for using up leftovers. Delicious any time of the day!
Ingredients
- 1 sheet of Schar puff pastry dough
- 1 cup of chopped meat (I used ham).
- 1 cup of chopped vegetables (I used cooked asparagus, white onion and red pepper).
- 3 tablespoons of organic Dijon mustard.
- 3 tablespoons of avocado mayonnaise (You can also try regular mayo, heavy cream or coconut cream)
- Optional:
- Egg wash followed with a sprinkling of Trader Joe's Everything But The Bagel Sesame Seasoning Blend
- If your diet allows dairy a handful of shredded cheese would also be delicious.
Instructions
- Thaw Puff Pastry according to the package directions.
- Preheat oven to 400 degrees F.
- In a bowl mix together the mustard and mayonnaise. Add in your choice of chopped meat and vegetable.Stir until the meat and vegetables are coated with the mixture.
- Line a cookie sheet with a reusable oven liner. Parchment paper also works. Lay out the thawed dough. You can roll it out a bit for a thinner crust with a glass drinking glass or rolling pin.
- Spoon your mixture onto one side of the pastry. Fold the dough over. Press edges to seal. Cut slits in the top of the pastry.
- Brush on a beaten egg wash and sprinkle on the seasoning. (Optional)
- Bake 14 minutes or until golden brown.
Notes
Schar puff pastry is gluten, wheat and lactose free.

That had to be a huge challenge, Laura — and probably still is. Fortunately,, you are a resourceful woman and comfy in the kitchen! This looks good and I’m saving it for a good summer lunch that could be easily shared. It seems like we always have leftover ham!

have been gluten and dairy intolerant for years. I didn’t realize that Schar made this puff pastry product. I will definitely look for it!! I too have to cook from scratch most of the time and am always looking for something new to try. Thank you!!

Looks delicious, Laura! I have to eat gluten free also and it’s a real challenge to find easy recipes. Also a challenge with a husband that just cannot/will not do GF and loves pasta. eeeeck. Now to find the Schar puff pastry.

We just discovered this puff pastry recently, too. One of our Christmas traditions is breakfast finger foods so everyone can eat as/when they want to. We used to include some sausage rolls that were like pigs in a blanket made by Sister Schubert, but didn’t feel right serving them after my d-i-l and grandson became gluten-intolerant (sadly, they don’t make them like they used to any more. They make a different kind of sausage roll that we don’t like nearly as well). We discovered the puff pastry work well for pigs in a blanket. We just used a pizza cutter to cut the dough into triangles to roll. I also used it as a pie crust once and loved it. I’m so glad someone invented this!
