No Bake Strawberry Cheesecake Parfait
A fast, fun and delicious dessert featuring three yummy layers: cookie, no bake cheesecake, and strawberry pie filling topped with whipped cream and sprinkles,
Ingredients
- 16 ounces of heavy whipping cream (Canned whipping cream can also be used.)
- 2 tablespoons of powdered sugar (Omit if canned whipped cream is used.)
- 8 cookies such as vanilla sandwich, vanilla wafer or graham crackers
- 8 ounce package cream cheese, softened
- 2 tablespoons granulated sugar
- 1 cup diced strawberries
- 2 tablespoons hot water
- 1 packet unflavored gelatin
- 21 ounce can strawberry pie filling
- rolled wafer cookies (optional garnish)
- sprinkles (optional garnish)
Instructions
- Whip the cream with the powdered sugar until stiff peaks form. (I used a mixer.) Transfer into a bowl, set aside in the refrigerator.
- Crush the cookies. Spoon the crumbs evenly into the bottoms of the eight dessert cups.
- Mix the softened cream cheese and granulated sugar together until smooth. (I used a mixer.)
- In a separate bowl mix the hot water and gelatin together until dissolved. Add to the cheesecake mix.
- Gently mix the diced strawberries into the cream cheese mixture.
- Fold in ½ cup of the whipped cream gently to the cream cheese mixture.
- Divide the strawberry cheesecake mixture evenly into the dessert cups.
- Open the pie filling. Evenly distribute the pie filling on top of the cheesecake layer.
- Add the remaining whipped cream into a piping bag with a 1 M icing tip and pipe the remaining whipped cream on top of the parfaits.
- Refrigerate at least 30 minutes to let the mixture firm up.
- If desired, add rolled wafer cookies and sprinkles right before serving.
Notes
Instead of individual dessert cups you may also use a glass trifle bowl.
The recipe can be made ahead up to two days prior. Just wait to add the toppings.
I hope you have enjoyed this No Bake Strawberry Cheesecake Parfait recipe.
