Hello sweet friends! I am so excited to be participating in the new Budget-Friendly Recipes hop hosted by my dear friend Marty of A Stroll Thru Life. If you are new to Decor To Adore may I say “Welcome!” I love making soup in the cold winter months. One of my favorites is Easy and Delicious Tortellini Soup.
Easy and Delicious Tortellini Soup
This tasty soup is wonderful. It can be put together and on the table in minutes. It requires just a few pantry staples and whatever you have on hand in your vegetable crisper.
A printable recipe card is available below but here are the basic ingredients.
- 2 tablespoons of olive oil
- 1 white or yellow onion, chopped
- 3 cloves of garlic, diced
- 2 stalks of celery, chopped
- 2 carrots, chopped (You can also add or substitute other vegetables such as squash, zucchini, mushrooms.)
- 1 bag of fresh spinach
- 2 boxes of broth/stock. (I generally use vegetable or chicken.)
- One 28 ounce can of whole, peeled plum tomatoes. (I love San Marzano tomatoes.)
- 1 bag of tortellini. (It can be dried or fresh. I usually select cheese tortellini.)
Optional
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- For a heartier soup, you can add Italian sausage.
Fast and Easy Cooking
Saute the onions, celery, carrots and optional Italian sausage in olive oil for 5 minutes or until the onions are translucent.
Add the diced garlic and sauté for another 2 to 3 minutes.
Add the stock, tortellini, tomatoes, spinach, and balsamic vinegar. Season with salt and pepper, if desired.
Bring ingredients to a boil, reduce heat and simmer until the pasta is tender.
You can top the soup with a bit of cheese and serve with a nice loaf of fresh bread.

This soup is delicious topped with a bit of Parmesan or Mozzarella cheese. Serve with a slice of bread.

I wrote this one down before I even finished the post — and except for the tortellini (now on next week’s list!) I’ve got all the ingredients! It looks hearty and warming and perfect for our very cold winter evenings — served up with Rick’s bread and maybe a salad on the side!
