Hello sweet friends! While the first of April is typically known as April Fool’s Day here in the states, I want to assure you that this post, Spring Tea With Avocado Brownies, is no joke.
As many of you may know, I try to follow the AIP (Auto Immune Protocol) Diet as much as possible. Eliminating gluten and dairy from my diet lessens the joint pain I experience as a symptom of Lupus.
One of the hurdles in this new way of eating has been finding a yummy dessert that satisfies without requiring hours of prep in the kitchen.
The Ingredients
A few days ago I was whirling around at Storybook Cottage in preparation for a lovely houseguest. I wanted a yummy dessert that I could serve after dinner. Being short on time I had no desire to bake from scratch.
Truth be told, most of the homemade baking recipes I have made with various flour alternatives have not turned out. So I wanted to try a box mix.
The gluten free premade mix also offered a vegan preparation method. In my health journey research I have read that avacado can be substituted for fats/oils in some baking recipes. As I had three avocados sitting on the counter with maybe a day left to eat them all I decided to give it a go.
Most recipes call for a one to one ratio when substituting avocado for oil. So I used the equivalent of one avocado instead of oil. I must admit seeing the green bits in the sea of chocolate was interesting.
Spring Tea With Avocado Brownies
While the brownies were cooking I decided to set a pretty tablescape. As it was lunchtime I made up some savory food items to enjoy. My great Aunt Dot always said that it doesn’t take much more time to create a pretty presentation of food. I agree wholeheartedly. I topped pumpernickel rounds with chicken salad and quartered cherry tomatoes. The rest of the avocados were sliced up and dressed with lemon juice, olive oil and topped with some salt and pepper. A bit of cheddar cheese and nuts rounded out the offerings for my lunchmate.
Sweet Guy is always up for being a taste tester.
I used his great grandmother Joyce’s Desert Rose dishes paired with his great Grandma Jingles’ cross stitched table topper. Using these treasured heirlooms is a lovely way to honor family members and keep memories alive.

I served the brownies with a touch of coconut cream and some blackberries.
The brownies were delicious. Neither Sweet Guy or myself tasted the avocado.
I wouldn’t hesitate to add avocado as a fat to other recipes.

Oh, that looks good! I’ll try that myself and tell my friend who is always looking for KETO desserts when she has dinner parties. My Grandmother owned that pattern, too. They are strong dishes., aren’t they? They were her good dishes.
I will have to try these! Glenn has been eating keto for one month and has lost 11 pounds. (The amazing Y chromosome! I have reduced calories to 1000/day for a month and lost a whopping 4 pounds!) I miss baking already and will be looking at mire keto recipes .
I love your dishes Laura and you are right…we should use these things. We can honor loved ones as well as being practical. I often think of the beautiful lingerie I kept in a drawer for a special occasion that never happened when my late husband died.
