I love the French word for seafood, “fruits de la mer”. It literally translates to “fruits from the sea”. Here is a fun summertime meal favorite, Sandwichs de Crevettes or Shrimp Roll Sandwiches.
Our kitchen is one of the hottest rooms in the house and with temperatures hovering in the 110’s this week the last thing I want to do is turn on the oven. It can be a challenge to come up with cool and satisfying meals but my family LOVES these shrimp sandwiches. They are really easy too.
Shrimp Roll Sandwiches
I mix up the ingredients in the morning while the kitchen is still cool. These sandwiches taste better if the ingredients have a bit of time to blend together.
Here are the Shrimp ingredients:
- 2 pounds of peeled and cooked shrimp (I just buy it ready made in the freezer section.)
- 1/2 of a white onion finely chopped
- 2 celery stalks chopped
- 1/2 cup mayonnaise
- 2 teaspoons of Dijon mustard
- 1 tablespoon of lemon juice
- 1/2 teaspoon of garlic powder
- salt and pepper to taste
Secondary ingredients
- 6 to 8 hoagie style rolls or miniature baguettes
- 1/2 of a cucumber finely sliced
- 6 to 8 leaves of butter leaf lettuce
Combine the first seven ingredients in a large bowl. Season with salt and freshly ground pepper to taste. Refrigerate in a sealed container for at least one hour. When you are ready to assemble begin by placing the open baguettes on a plate. Line the bread with lettuce and 3-4 cucumber slices, top with shrimp mixture. May be served with a lemon wedge.
I chose to pair this meal with a bit of fresh fruit and my favorite potato salad.
For those who are on low carb or gluten free diets this is wonderful just as a salad. Just line the plate with the lettuce and cucumber and top with the shrimp.
