Perfect Summer Peach, Pecan and Burrata Salad
This month’s theme is a PEACHES! Our inspiration photo was found on Pinterest. The challenge was to come up with a scrumptious summer recipe.
I first had a burrata and peach salad a few years ago while traveling through France. Over the years I have created my own recipe that my family loves.
The best part is that it is ready is 15 minutes and you don’t have to turn on the stove!
Perfect Summer Peach, Pecan and Burrata Salad
This delicious salad can be made in minutes. Perfect for lunch or dinner on hot summer days!
Ingredients
- 6 cups arugula
- 8 ounces burrata (mozzarella will also work) torn into bite sized pieces
- 3 large fresh peaches, cored and sliced
- 1/2 purple onion, sliced
- 1/4 cup of pecans (they may be toasted, if desired)
- I package of sliced prosciutto cut into 1/2 inch pieces (optional)
- balsamic glaze
- salt and pepper (optional)
Instructions
1. Arrange arugula on large serving tray.
2. Place peach slices over the arugula.*
3. Layer on pieces of burrata.
4. Sprinkle on the purple onion and pecan pieces.
5. Drizzle balsamic glaze all over salad just before serving.
*If fresh peaches aren't available try apricots, pears, or oranges.
