Ground Beef Wellington
You may already have most of the easy-to-find ingredients on hand.
The complete recipe card is listed below.
On busy days I like to cook the beef mixture ahead of time. Simpy cover and place in the refrigerator until you are ready to fill the pastry dough.
It’s delicious served with a salad for a complete meal!
Just like Delicious Cream Cheese Chicken the leftovers reheat well and taste great.
Recipe Card
Ground Beef Wellington
A delicious meat filling encased in pastry dough.
Ingredients
- One pound of ground meat (beef, turkey or chicken)
- One onion diced
- One cup of hash brown potatoes (I used the frozen variety with peppers.)
- One cup of vegetables. (Perfect for cleaning out the refrigerator. This time mushrooms and tomatoes were used. But carrots, zucchini and more work well.)
- One cup of cheddar cheese
- One package of crescent rolls
- Seasoning to taste such a salt, pepper, garlic, parsley, etc.
Instructions
- Heat over to 375 degrees.
- Brown the ground meat along with the onion in a frying pan.
- Add in the hashbrowns and remaining vegetables and cook for an additional 3-5 minutes until tender.
- Meanwhile, open the can of crescent rolls onto a cookie sheet but do not separate. Parchment paper or a Silpat can be used to line the tray.
- Use a small glass cup as a rolling pin to smooth out the crescent roll dough into a larger rectangle.
- Add cooked meat mixture to the center of the pastry rectangle. Top with cheese.
- Pull the pastry up on all sides to cover the meat mixture.
- Bake for approximately 20 minutes.

Would you believe me if I said I’ve never heard of Beef Wellington before? It’s true! Looks easy though and very fancy. Pinned!

Should the pastry be completely sealed?

Laura, I’ve made Beef Wellington many times The traditional way with tenderloin and puff pastry, but never thought about ground beef. Sounds interesting and much less expensive. This is definitely the budget friendly version. Happy to be on this hop with you.
