This past Sunday I shared that our family, since the the beginning of the year, has tried to eliminate processed foods from our diet due to recently learning there are family members with severe allergies.
A few readers mentioned that they would love to have a healthier diet but don’t have the time to cook from scratch or find that it tastes really bland.
For Superbowl Sunday I created a delicious and healthy meal in under 30 minutes (and that included the photography).
My picky family not only cleaned their plates they asked for seconds.

I love Chipolte and it is actually a fairly healthy option in the fast food industry. I made the guacamole first as it always tastes better if you wait 20-30 minutes to let the flavors meld and develop. I used Ina Garten’s recipe.
Avocado is in season here and organic versions were available at the farmers market. I took Mr. Décor a plate of it into the man cave where the game was on along with some organic corn chips. He asked where the rest of the chips were and I said “Well, that’s the portion size listed on the bag.”
I think as American’s we’ve gotten used to portions that are way too large. I told him more food was coming and to be happy. He proclaimed the guacamole “The best he’d ever eaten.” I agree.
Next, I started the lime cilantro rice. I found a copycat recipe that turned out pretty well. I did use organic butter and substituted brown rice for the jasmine rice.
As the rice was cooking on the stovetop I chopped up some wonderful organic tomatoes found at the farmers market. Super yum~ they were so full of flavor! A can of organic black beans was opened, drained and washed. I substituted organic romaine and oak leaf lettuce for Chiptole’s standard iceberg as it is more nutritious. Rounding out the offerings were organic cheddar cheese and sour cream. (You could also use plain yogurt.)
Bowls were created by each of us and washed down with glasses of homemade lemonade. Citrus is in season here. For dessert we enjoyed homemade sugar cookies with dried cranberries.
I know a few of you might say “Where’s the meat?” Trust me, this meal was so flavorful it wasn’t missed and there is tons of protein in the beans and the dairy.

Isn't it funny that with the extra flavour in organic vegetables you don't even notice if there isn't any meat. I don't bother with meat in any of the pasta dishes I make anymore. You might be interested in reading Real Dirt by Harry Stoddard. You can find it on Amazon. It's an eye opener into the difference between organic and GMO/chemical laden food.
